There’s something magical about making fresh pasta from scratch. It’s not just about the taste (which is incredible), but also the process – it’s like a little dance where your hands bring simple ingredients to life in the most rewarding way. Today, I’ll show you how to make fresh pasta that’s so good, even Nonna would approve.
Pasta is as diverse as Italy itself. While some regions use semolina and water, others use a combination of flour, eggs, and sometimes semolina too.

Ingredients
For Fresh Pasta:
5 organic eggs
300g (10.5 oz) all purpose flour
200g (7 oz) fine semolina flour
For Boiling Pasta:
Sea salt
Water
Method
Making the Fresh Pasta
1) On clean work surface, combine the semolina and flour, mixing with your hands until evenly blended.
2) Form the mixture into a mound and create a well in the centre. Crack the eggs into the well and carefully whisk them with a fork or your hands, keeping the walls of the well intact.
3) Gradually bring the flour from the edges of the well into the eggs, mixing little by little until the mixture starts to come together.
4) Use your hands to combine the dough. If needed, use a scraper to gather any loose flour and bits.
5) Begin kneading the dough by pushing it forward with the palm of your hand, folding it back, and repeating. Rotate the dough vertically and continue kneading.
6) If the dough feels dry, wet your hands slightly and keep kneading until all the flour is absorbed. If there’s still dry flour left on the surface, sprinkle a very small amount of water to help incorporate it.
7) Knead the dough for about 10 minutes until it is smooth, elastic, and well-combined.
8) Wrap the dough tightly with plastic wrap or cover it with an overturned bowl. Allow it to rest for 10–15 minutes.
9) Cut a small piece of dough using a scraper and flatten it with your fingers into a rough square shape. Sprinkle the dough lightly with flour and prepare your pasta machine.
Rolling the pasta
1) Set the pasta machine to the widest setting and feed the dough through. Fold it in half, then pass it through again. Repeat this process two more times, folding between each pass, to remove any air pockets.
2) Adjust the machine to a tighter setting and feed the dough through again without folding. Repeat this process, narrowing the settings each time, until the dough reaches your desired thinness.
3) If the pasta becomes sticky, dust it lightly with semolina before rolling further.
4) Cut the pasta sheet in half if it’s too long, then sprinkle semolina on the pasta sheet and the machine. Use the cutter attachment to create your desired pasta shape.
5) To make nests, gently twirl the cut pasta around your fingers and place it on a tray lined with baking paper. Cover with a clean tea towel to keep your pasta fresh and to prevent it from drying out.
Cooking the Fresh Pasta
1) To cook the pasta, bring a large pot of water to a rolling boil and add 1 tablespoon of sea salt or rock salt.
2) Gently place the fresh pasta into the boiling salted water and stir immediately to prevent sticking.
3) Cook the pasta for 2–3 minutes or until its al dente.

I know that spaghetti meatballs are loved by many, but I really suggest you try my Nonna's recipe, the one with mini meatballs, because only in that way can you enjoy a real forkful of pasta in which there are all the ingredients of the dish , which the version with the giant meatballs cannot give you!

Chicken Marsala is a beloved dish that traces its roots to Sicily, where Marsala wine is from. This rich, nutty, slightly sweet treasure gives this dish its signature flavor. Over time, the recipe made its way to America, and it evolved into a staple of Italian-American cuisine. But this recipe keeps things classic, following the original, authentic way to prepare it—no shortcuts, and definitely no unnecessary additions.
Despite its luxurious taste and aroma, Chicken Marsala is surprisingly easy to make. It requires minimum prep time and only takes about 10 minutes to cook. So even on a busy weeknight, you can serve up a restaurant-quality meal.

INGREDIENTS
2 chicken breasts
200 g / 7oz brown mushrooms sliced
½ cup vegetable stock
1 Marsala wine bottle
2 garlic cloves minced
1 small bunch fresh rosemary
1 small bunch fresh parsley chopped
50 g/ 1.75oz butter
Plain flour for coating
Extra virgin olive oil EVOO
Salt & Pepper
METHOD:
1) Place a sheet of baking paper on your chopping board. Lay the chicken breasts on top, cut them in half, and cover with another sheet of baking paper. Use a mallet to gently flatten the chicken until even.
2) In a bowl, combine plain flour with a pinch of salt and pepper and mix. Lightly coat each chicken piece in the seasoned flour, shaking off any excess.
3) Heat a large pan over medium-high heat. Add a generous amount of EVOO and half the butter. Once the butter melts, add the chicken pieces.
4 Season with a little salt and pepper, then cook for 2 minutes on each side, or until golden brown. Turn off the heat and transfer the chicken to a plate lined with paper towels to rest.
5) Clean the pan by removing any leftover burnt bits, but leave the sauce which has been created. Add more EVOO, turn the heat up to medium, and add the crushed garlic. Sauté until lightly golden, then add the sliced mushrooms to the pan and stir to combine. Remove the rosemary leaves from their sprigs and add them to the pan. Stir again.
6) Pour in ½ cup Marsala wine and season with a pinch of salt and pepper. Cook for 5–7 min, stirring occasionally, until the alcohol evaporates or the liquid reduces slightly, then add half a glass of vegetable stock, cover with a lid and let it simmer for another 5 minutes, stirring occasionally.
7) After 5 minutes, remove the lid. Sprinkle a small pinch of flour into the sauce, and stir to thicken. Add the remaining butter and return the chicken to the pan. Pour a little more Marsala over the chicken, turning each piece to coat it fully in the sauce. Once the chicken is evenly covered and the sauce is glossy, turn off the heat and serve immediately.
HOW TO SERVE
Finish your dish with a sprinkle of freshly chopped parsley for a pop of colour. Serve it with warm fresh bread to mop up the sauce, or slice the chicken and layer it on bread for delicious bite-sized goodness.
